red lentil soup

Over Easter I enjoyed......

Lisa’s Spicy Lentil Soup

125g butter
2 medium onions
2 gloves garlic
1 tbs garam masala
2 teaspoons turmeric
½ teaspoon cayenne pepper
2 cups dried red lentils (best if you soak them for a bit first)
2 x 415 ml cans tomato puree
2.5 lts vegie stock (10 cups) (use boiling water & add when hot)
1/3 cup fresh coriander

heat butter, cook onion, garlic & spices stirring for 3min. Add lentils stir for another 2min. Stir in puree & vegie stock. Bring to boil, simmer uncovered for about 30 min or until lentils are soft. Stir in coriander before serving. You can add some natural yogurt when serving. If looking for a heartier meal add sweet potato or/and mushrooms during the cooking.
